The parcel

On the hillside towards the Hautes-Côtes, Aligoté grows in shallow marl soils. This old Burgundian grape produces a white wine valued for its fruit and freshness.

Winemaking & ageing

Whole bunches are pressed for two hours after harvesting into small crates. Tank fermentation lasts around fifteen days at 18 to 20 °C to preserve fruit aromas.

Tasting notes

Pale gold with green reflections. White flowers and cut hay on the nose, with a mineral note and a supple opening on the palate.

At the table

Gougères, seafood, charcuterie or Burgundy snails. It is also the traditional base for a kir.
