Cellaring is counted from the vintage and depends on storage conditions.

The parcel

Below the statue of Notre-Dame de Bonne Espérance, these vines sit about fifty metres above the Clos du Village. The slope is steeper and the soil poorer, with a thin layer of topsoil over white marl and limestone.

Winemaking & ageing

Grapes are harvested into small crates and pressed whole. After 24 hours of settling at low temperature, the juice ferments in barrels, 30% of them new. Ageing on lees with stirring continues until July, with bottling after about twelve months.

Tasting notes

The Chardonnay's power softens after its first few years. Toasted almond and flint notes become clearer with age.

At the table

Langoustines, fish baked in parchment, white meat or Comté.
