Cellaring is counted from the vintage and depends on storage conditions.

The parcel

En Caradeux lies on a steep, east-facing slope. Light soil, sand and scree cover the hillside. Most of the slope is classified Premier Cru, while its upper section is village appellation.

Soil Light sandy soils and limestone scree

Winemaking & ageing

Grapes are harvested into small crates and pressed whole. After 24 hours of settling at low temperature, the juice ferments in barrels, 30% of them new. Ageing on lees with stirring continues until July, with bottling after about twelve months.

Tasting notes

More structured than the village wines, this white combines fruit aromas, a rounded palate and a mineral thread.

At the table

Fish baked in parchment, pâté en croûte or white meat.
