The parcel

Old vines root in marl-limestone alluvium deposited over time below the slopes of Savigny and Aloxe. The stony subsoil contains traces of iron.

Winemaking & ageing

Grapes arrive in small crates and are sorted before vatting. Fermentation lasts around fifteen days with punch-downs, followed by barrel ageing with 30% new oak. Bellows-assisted racking limits handling.

Tasting notes

Raspberry and sour cherry on the nose. A rounded palate rests on firm structure and fine tannins.

Warm starters, roast poultry or meat risotto.
