The parcel

Les Combottes extends beyond the village on a southwest-facing hillside. Its name refers to the small valleys that shape the land. The vines were planted in the early 2000s in light, pale soils.

Winemaking & ageing

Grapes are harvested into small crates and pressed whole. After 24 hours of settling at low temperature, the juice ferments in barrels, 30% of them new. Ageing on lees with stirring continues until July, with bottling after about twelve months.

Tasting notes

A fresh, fruity white with a golden colour. Spice accompanies the fruit, followed by honey and flint as the wine matures.

Fish, shellfish, warm goat cheese or Bleu de Bresse.
